The full picture

A stockpot was never the right vessel for sous vide. It loses heat through steel walls, evaporates a litre overnight, and gives the circulator nothing to hold on to. The EVC-12 fixes all three at once: clear polycarbonate insulation-friendly walls, a lid that seals the surface, and a mounting hole machined for the Anova Nano (750W), Mini 850W, AN500 1000W and Pro 3.0 — the cooker drops in and sits straight.

The detail owners mention most is the hinge. Instead of prying off a full lid mid-cook — and dumping condensation on the counter — the front section folds back, so you can check a bag, top up water or drop in another portion without breaking the seal around the machine. EVERIE tests that hinge to 100,000 cycles, which is more brisket than anyone will ever cook.

Engineering, line by line

01

Cut for the Nano family

The lid opening matches Anova Nano, Mini 850W, AN500 and Pro 3.0 exactly; Instant Pot circulators fit with a slightly looser collar.

02

Evaporation solved

A closed surface means overnight and 48-hour cooks finish with the water level where you left it — no 3 a.m. refills.

03

Fold-open hinge

The front panel collapses back for checks and refills; the hinge is rated for 100,000 open-close cycles.

04

Bags stay under

The lid sits snug enough to pin floating bags below the surface — no separate clamps, no half-raw edges.

05

NSF-approved bath

The container itself carries NSF approval for food-contact water heating; the lid is food-safe plastic.

03

Made for you if…

The default choice for Anova Nano owners moving past the stockpot phase — anyone doing overnight briskets, weekend meal prep or simply tired of topping up water every few hours.

04

Owner's notes

Check your circulator model first: this lid fits the Nano family and Instant Pot only — the older Bluetooth/WiFi Anova needs a different cut.
Fill to at least the circulator’s minimum line before mounting; the lid seals so well that evaporation will not save you from a low start.
Wash the container by hand with warm water — polycarbonate keeps its clarity far longer away from dishwasher heat.
